Faux Fried Okra

Avery will tell you her favorite food is okra.  I think she gets that from me.  I LOVE a good fried okra but hate that it is not so...um...healthy.  So, my mother-in-law found a new way of making 'fired" okra.  BAKED okra.  It looks and taste the same just not greasy.  Here is the step by step process.  Enjoy!
 
What you need:
Okra
Milk
Corn Meal
Olive Oil
Optional: Tony's for a kick!
 
Soak your okra, and wash it really well with water.

Cut your okra into bite-sized pieces discarding the ends.  Your knife should go through very easily. 
If its crunchy or hard toss that piece.

In a bowl all some milk and then soak the pieces in the milk for a minute or two...

In another bowl add the corn meal (and Tony's if desired)
Then take the milk-soaked pieces out of the milk and place int he corn meal...roll them until they are covered well

repeat these last two steps(milk and corn meal) until all your okra is done



Rub olive oil onto a baking stone or cookie sheet then place okra onto the stone/sheet
Bake at 425 for 20 minutes...give or take a few minutes


Done!
